I&#039;m so happy you enjoyed your meals in Spain! Cocido is a HUGE meal but as you say so tasty and flavourful!!!
Nearly each spanish region has its own cocido and here in catalonia we have Escudella i carn d&#039;olla. Dishes are similar from one to other region and main ingredients are usually the same, also,  the order  throwing them into the casserole. I have a small mention in my blog about Escudella (see christmas broth) and Pilota (meatball).
Never Ever heard of adding nutmeg or cinnamon!
